What they do

Dairy technologists apply science and engineering to the processing, preservation and quality assurance of milk and milk products — including pasteurised milk, cheese, butter, ghee, yoghurt, ice cream and functional dairy ingredients. They optimise processing parameters, manage food safety programmes and develop new products. In India the field is underpinned by one of the world's largest cooperative dairy networks (Amul, Mother Dairy, NDDB).
